What is AssistiveTouch? - illustrated definition card

AssistiveTouch puts a floating on-screen button on your iPhone that can perform gestures, press hardware buttons virtually, and trigger custom actions — vital if a physical button breaks or gestures are difficult.

Enable it under Settings → Accessibility → Touch → AssistiveTouch. You can customise the menu and assign single-tap, double-tap and long-press actions to it.
